Bacteria thrive on food products kept between 8°C and 63°C – the temperature range described as the Danger Zone by the Food Standards Agency (FSA). Keeping products out of this zone is essential for food safety because harmful microbes don’t grow in low temperatures and can’t survive high temperatures.
